S EPO Community E-Mails: September 2021 Sent 2021-09-29: MARKETPLACE: Any Updates Needed? - In looking at the Household+ Marketplace pages on the Web site I was wondering if there are any updates that need to be made. Beth Parrish SEPO Web site Admin E-Mail: sunshinecountryclubweb@gmail.com 314-960-6710 Sent 2021-09-29: SEPO Suggestion COMPLETED: Community Divided & No New Covid-19 Mandates Needed - One of our Sunshine residents submitted a SEPO Suggestion/Complaint/Idea form stating they felt the community is divided and assaulting each other and they didn't feel mandates to segregate vaccinated vs unvaccinated persons within the community were necessary. The Board is working to resolve any issues that may be causing residents to feel the community is divided and assaulting each other. If anyone is saying there are forthcoming mandates to segregate vaccinated vs unvaccinated persons within the community, that is definitely not the case. It is only rumor. SEPO Board Sent 2021-09-28: Additional Street Construction/Repairs in Sunshine - The minutes from the Sep 23, 2021 Board meeting are not yet ready for distribution. But we wanted to give everyone an update on the ongoing street construction on W Indiana Circle and the street repairs that started today on W Michigan Ave. Sorry this didn't go out sooner, but everything happened very quickly this week concerning the street repairs. At the 09-23 meeting Larry Keller had asked the Board to consider appropriating a maximum of $20,000 to remove and repair defective asphalt pavement, including but not limited to W Michigan Ave, W Iowa Ave, N Missouri St and seal coating the outer edges of W Texas Ave. He proposed we use the same company, D & J Site Construction, that has been working on W Indiana Circle as they were still onsite and we had established a good relationship with them. The Board approved Larry's request. Tony talked to the contractor and he was able to start on road repair work on W Michigan today. Owners on W Michigan are able to work around this construction by parking their vehicles next to the tennis courts. A 2-pass seal coat is scheduled for W Indiana Circle, which will require the entire street to be closed for 3 days. W Indiana Circle residents will be notified as the contractor prepares for this effort next week. If weather holds off, the Contractor may finish this repair work on W Michigan and W Indiana Circle in the next 2-3 weeks or less. We will be playing at 5:00 as it is getting darker earlier. Meet beside the shuffleboard courts at 4:45 for team and hole assignments. All are welcome to join the fun. No charge, just a good time. Open to all levels of golfers. Have added several beginners this summer and they are having a ball. So come one, come all. Per Marian Young (Women's Club Board) we will not be able to have Bingo at SEPO because we are a 55+ community, which prohibits us from having Bingo, selling cards or paying out money. It would be considered gambling if we did it. We could only get a one-time license for $25 for a one-time event, but not ongoing. If we were 60+ we would be exempt. Marian had just come to stay with JoAnne and ultimately make a trip here. Marian laid down for a nap, JoAnne went to check later and she had gone peacefully with the Angels. Marian was special - she was the SCCE Choir Director several years ago for many years and assisted putting on many wonderful shows here, especially at the holidays. She also had her Choir group sing occasionally with the Sunday Night Sunshine Jammers and was a presence in many of Lassey's productions. And she made some great dishes for our Thanksgiving and Christmas dinners. We will miss you but remember the "Good Old Days". God Bless American and God bless you and your family. I just wanted to let you all know my laptop has found its way to the hospital and I can now do all of the SEPO Communications duties I was performing before my accident. Here’s a little history to get you in the spirit. Mardi Gras, is traditionally celebrated as “Fat Tuesday” before Ash Wednesday and is the start of Lent. It is a tradition dating back thousands of years to pagan spring and fertility rights. The first Mardi Gras took place in March 1699 when French explorers landed in New Orleans where they held a small celebration dubbed Port du Mardi Gras. In the decades that followed, New Orleans and other French settlements began marking the holiday with street parties, masked balls and lavish dinners. In 1857, a secret society of New Orleans businessmen called the Mistick Krewe of Comus organized a torch-lit Mardi Gras procession with marching bands and rolling floats setting the tone for future public celebrations. Golf cart teams are challenged to earn the most points while cruising around Sunshine searching for items for which they have been given clues. Teams can be one or two people. First and second place awards will be given for the most points a team accumulates. Don't forget to have your golf cart batteries charged or your gas tank full. Just to clarify - You will never need to get out of your golf cart. The answer to all of the clues will be evident from the comfort of your cart. It might be benificial to you if you were to cruise around the STREETS of the Estates prior to the event in order to familiarize yourself with various items in people's yards, driveways, rooftops (yikes) etc. This may save you some precious time on Sat. Now keep reading and prepare to take a trip to the grocery store so that you can cook up a storm in order to enjoy yourself again with these savory delights !!! ***************************************************************************** Chinese Cabbage Salad (from Women's Club - Casino Night: 02-23-2019) Salad: 1 head of Napa cabbage(chopped fine) A large package of cole slaw mix was used for Casino Night. 1 bunch of green onions, chopped These were not added for Casino Night Crunchies: 3 packages of Ramon Noodles, any flavor You will not use the seasoning packet so discard or save for another use. Place the noodles in a large ziplock bag and crush into small pieces. Melt 1/2 cup butter in large fry pan and add the crushed crunches and brown and add 1 cup slivered almonds. Shaved almonds were used for Casino Night. Remove from heat and let cool. Pour on top of salad - Dressing: 1 cup oil 1 cup sugar 1/2 cup white vinegar 2 Tbl soy sauce Pour dressing on top of salad just before serving, then toss This makes a very large salad. Enjoy! It is in the frozen meat section and is called Bryons Barbecue Pork. ***************************************************************************** Chicken Philly Cheese Steak (from Women's Club - Casino Night) 2 Tbsp oil 2 Tbsp butter 2 skinless, boneless chicken breast OR 4 large boneless, skinless chicken thighs - thinly sliced garlic powder(3 tsp) or minced garlic(to your taste) salt and pepper 2 bell peppers, thinly sliced 1 large onion, thinly sliced 1 chicken bouillon cube, crushed 1 Tbsp brown sugar 1 Tbsp worcestershire sauce Add oil and butter to a large skillet over high heat. Season the thinly sliced chicken generously with garlic, salt and pepper. Add chicken to the skillet and cook for 5 minutes stirring every minute. Add bell peppers, onions crushed bouillon, brown sugar and worcestershire. Continue cooking, stirring occasionally and adjust heat to medium high when necessary. Continue cooking for 15-20 minutes or until any liquid is absorbed and chicken and veggies start to really caramelize.. Place cheese on both sides of a sub roll and place meat and veggie mixture the middle. Wrap each sub in aluminum foil and place in a pan in oven for 5-10 minutes at 350 degrees or until bread is warmed and cheese is melted. ***************************************************************************** Potato Rolls (from New Homeowners’ Party: 01-13-17) This is a bread machine recipe. It makes 32 dinner rolls per batch. Put in machine in the following order; § 1 3/4 C water § 4 C bread flour § 3 Tbsp. olive oil § 1 1/4 tsp. salt § 2 Tbsp. sugar § 1/2 C instant potato flakes § 1 3/4 tsp. yeast Process on dough cycle, when complete shape into desired forms. ***************************************************************************** Brisket (from New Homeowners’ Party: 01-13-17) Ingredients: · 3-4 lb. flat, well-trimmed beef brisket · 3-4 cups cold water · 1 cup white vinegar · 4 bay leaves · 2 Tbsp. veg, oil · 1 Tbsp. liquid smoke · garlic powder to taste · salt & pepper to taste · your favorite bar-b-que sauce Preparation: 1. Marinate brisket in water, vinegar and bay leaves for at least 8 hours or overnight. - Do this in a plastic or glass container. 2. Drain and pat dry. 3. Rub with mixture of oil, liquid smoke, garlic powder salt & pepper. 4. Wrap tightly in foil and place in roasting pan. 5. Bake in oven at 300 degrees for 4 hours. 6. Cool, slice and place back in foil. (I remove all fat when slicing) 7. Cover brisket slices with your favorite bar-b-que sauce (Sweet Baby Ray's was used at the dinner) diluted with the juice from your cooked brisket. 8. About 1 hour before you plan to serve, heat at 325 degrees for 1 hour. ***************************************************************************** CHOCOLATE TRUFFLE RECIPE 1/2 cup water 1/2 cup sugar 18 ounces semi sweet chocolate chips 1 cup butter 6 eggs Preheat oven 300*. Grease 9 " pan & grease parchment paper & put in bottom of pan. Put water & sugar in pan heat till sugar is dissolved completely. Set aside to cool. Melt butter in pan add chocolate chips & stir till melted. Add eggs one at a time & mix well. Add cooled sugar water, mix well. Pour batter into prepared pan. Add boiling water to larger pan & place pan into. Bake for 45 minutes. Center should be soft set. ***************************************************************************** BUTTERNUT SQUASH SOUP from Ladies' Luncheon 2 large butternut squash [6 lbs.] 4 large carrots 1 large onion 1 head garlic 3 large stalks celery [chop, boil till very soft, retain liquid and blend] 1 1/2 L. chicken broth 1 stick butter crème fraiche salt & pepper olive oil parsley Peel squash, carrots and onion. Cut into cubes. Drizzle baking sheet with olive oil. Spread cubed veggies on sheet, drizzle with oil, sprinkle with salt and pepper. Slice top off head of garlic and drizzle inside with olive oil, place on sheet. Roast veggies @ 350 for 30 minutes or until soft and starting to brown. Cool veggies and squish garlic out of skin. Place veggies, including blended celery, in batches, in blender with enough chicken broth to blend to a smooth consistency. If still too thick, add 1 T. chicken soup base powder to 1 cup water, mix into soup till desired consistency is achieved. Add 1 stick butter and reheat soup. Salt and pepper to taste. In 2 qt. mico. bowl, combine sugar & corn syrup; stir until well mixed. micro on high for 4 mins. Remove from oven, stir in peanuts. and mix well. Micro on high for 4 mins. Remove and add butter & vanilla; stir well. Micro for 1-1/2 mins. Remove and add baking soda. Gently stir until light & foamy. Quickly pour on cookie sheet & spread with buttered spatula. (this should be done quickly or it will harden in bowl) Cool for 30 - 60 mins. Break in pieces. Makes about 1/2 pound. Cook carrots --- drain well---add the honey mixture ... toss well makes 4 cups ***************************************************************************** Cherry Bliss Brownies Preheat oven to 350 degrees 1 19.5 pkg. brownie mix 1/3 cup vegetable oil 3 eggs lightly beaten 1/4 cup water put this brownie mixture in a 9 X 13 greased pan .... set aside 1 8 oz. softened cream cheese 5 tablespoon butter, softened 1/3 cup sugar 2 eggs lightly beaten 2 tablespoon all-purpose flour 3/4 teaspoon vanilla Beat cream cheese and butter in mixing bowl until fluffy. Add sugar. Beat in additional 2 eggs, flour and vanilla. Drop spoonsful of the mixture over brownie batter in pan. Use a knife to gently cut through batters to create a marble pattern. 1 21 oz. Place butter on bottom, add corn, cream cheese, salt/pepper, milk.Cook on high until it starts to bubble, turn to low. Cook all day. ----------------------------------------------------------------------------------------- We modified the rice recipe by cooking the rice on the stove & then adding chopped garlic, peppers & 1/3 c chopped onion. We then added the chopped sautéed vegetables & raisins to the cooked rice. We chose to omit the nuts, pineapple & parsley ***************************************************************************** Hawaiian Rice Pilaf 1 Tbs. butter 1-1/2 cups long-grain white rice 2 to 3 cloves chopped garlic 2/3 C green pepper 3 cups chicken broth 1/2 cup golden raisins 1/2 cup roasted macadamia nuts salt to taste-we did not add salt parsley Preparation: Melt butter in oven-proof casserole dish (with lid). Add rice and garlic, stirring to coat. Stir in peppers and chicken broth. Cover, and bring to boil. Stir in raisins, macadamia nuts and sage. Add salt if desired. The 2024 Bird Migration is upon us and we are very excited to announce our March 14 outing to Resaca de la Palma State Park, just outside Brownsville. Debbie Gossman and I are working on a tour to Salinas Family Farm on February 13th. More details to follow. Salinas Family Farm is a small family owned business located in Lyford, Texas. Organic practices are used. They have "U Pick" for the strawberry season, but all depends on the weather. Also, broccoli, cabbage, cauliflower, celery, sweet potato, etc. Special note: Debbie is going to practice propagating bouquet roses that are left over from a special occasion or Valentine's Day. Should her experiment work we will have a class next season. The Deadline for signing up for tickets is this Friday, Dec. 22nd. The signup sheet is on the West side of the library. The deadline is early due to the holidays and our chicken supplier taking time off. Tickets are $12 dollars and will be hand-delivered to you in early January. Fill in the front of the envelope, insert money and drop in the lock box. You will be hand-delivered an actual ticket before the event. Firemen will set up near the gazebo early Friday morning to cook the chicken and charro beans. Menu includes 1/2 a chicken, charro beans, coleslaw, macaroni salad, bread, jalapenos, cake, and iced tea or water. Deadline to sign up is December 22nd. We encourage interested persons to sign up in advance. There is no guarantee that extra plates will be available at the door. It will be held Friday, January 5, 2024 @ 4PM in Retzlaff Hall. You may eat at the hall or take your plate to go. The cost will be $12 per plate plus any extra donations are happily accepted. To purchase tickets there is a signup sheet in the library, along with envelopes, for those planning to attend. We are excited that the Harlingen Fire Fighters will be spending the day cooking chicken by the gazebo in their big pit! We anticipate many local police and firefighters will be attending this event. Activities: Special (2026-2027 Winter Season) Additional Details Resident Photos (2026-2027) *************** UPCOMING (2026/2027) Resident Photos Newsletter 2026-03: Resident Picture Directory - Back in November when I was filling in for Valerie during her vacation, a representative from Universal Church Directories stopped in to talk about creating a photo directory for our community. I took all the information, thinking that this would be a wonderful thing to do during our 2026-2027 season (our last directory was done in 2020-2021). I presented this project to the SEPO board at the February 9th board meeting, and it was approved as a SEPO sponsored event. At the Women’s Club meeting on February 20th, I talked about this project hoping to get a committee started. A huge thank you to Judy Stone and Jill Ventrello for chairing this project. Here is a summary of the details we know now: Dates of photo sessions: several days in both December 2026 & January 2027 (exact dates TBD). Every household photographed by Universal will receive a FREE 8 X 10 portrait and directory booklet. Universal will provide a professional studio right here in our community. If you have pets, you are allowed to include them in your photo(s). Bring props that express you and your personality such as instruments, sports equipment and hobby items. The photo you pick for the directory booklet will also be posted on our community website under the secure resident section. This photo directory project is open to homeowners and renters – we hope all of you will participate in getting your photo taken. This is a 27-hole, 3-day golf scramble, with an awards dinner on Saturday evening. We have had more than 180 people participate in this event in the past. It is a fun tournament for 55+ aged persons. Each year we encourage Sunshine Country Club residents to participate in any way they are most comfortable. We know that everyone is not a golfer, but this event is a perfect way to get involved in our community and “Let the Sunshine In!” Although the GNDGT Committee will purchase many gifts for the Award Dinner, in the past, we asked residents to consider preparing a gift basket and donating it for the drawing/awards dinner. Gift baskets have been a great success as a personal prize during the awards dinner. Many residents donated these baskets, which the recipients greatly appreciated during the drawing. This year we would also like to open the possibility of Donations. If you would like to participate with a donation, here are some ideas: Gift baskets valued at $25- $50, filled with “new items,” (In past years, many of the baskets were filled with items of their favorite sports team or “New” items purchased from any local retailer or even your hometown). You might consider donating a Gift Card. You can donate any amount from local retailers, including restaurants. Many residents had questions, suggestions, opinions etc. during the Information meeting. Several residents stated the ‘rumors’ they were hearing around the community. We hope residents left the meeting feeling prepared to vote on the proposed ballots. This meeting was not on Google Meet, and therefore, not recorded. We are asking those in attendance to assist in answering questions etc and clearing up rumors they have heard from their friends and neighbors. In fact, the final statement at the meeting was from a resident asking the attendees to do just that. As was stated during the meeting, these ballots are not proposals to benefit the Board. They are not ‘for’ the Board. They are proposals from the Board that we hope you believe will benefit the entire community. The ballots have been on the Web site for a few days now HERE . PLEASE NOTE: These ballots have not yet been delivered to Owners. The Board will be taking one final look at them during the Jan 10 Board meeting. SEPO & Covid-19 Restrictions Covid-19 & SEPO Board Approved Announcement as of the March 25, 2022 Board meeting There are no longer any Covid-19 restrictions within all SEPO Community Property. That includes all buildings, pool, pavilion, gazebo, golf course etc. Also, the Board is no longer requesting the Covid-19 statement/disclaimer be read at SEPO meetings and events. Everyone should feel free to wear a mask or take any other safety precautions they feel necessary to protect themselves. And, as is always suggested with a cold, flu, etc., if you feel sick, please stay home and do not expose others. We thank you for your diligence these past months/years in doing everything possible to keep our Sunshine Community safe and protected. NOTE: The justification for lifting any restrictions is based on current CDC recommendations and Cameron County statistics dated March 2022. - Media System Use Guidelines | Sunshine Estates
Media System Use Guidelines - Retzlaff Hall (Revised January 26, 2020) If you are going to use Retzlaff Hall for an event, it must be reserved ahead of time through the SEPO Office Manager so as to avoid event conflicts. Any event utilizing the Retzlaff Media System must be open to the community to attend. No personal or private party use allowed. Information about events must be: Sent to the community via SEPO E-News ( sepoenews@sunshinecountryclub.com ). Posted on the Web site HERE . If you wish to do so, posted in the Library/Lounge. The Media system consists of: 2 TVs A DVD player Surround Sound (a sound bar and a floor speaker) An antenna for local TV stations Remotes: The two TVs run off the same remote. Sound (via the sound bar) has its own remote. The DVD player has its own remote. You need to make sure you are close enough to the piece of equipment you are wanting to turn on or off. The remotes will be on the shelf along with the Sound Bar. They will be stored there, but if they are abused, we will look at a "sign-out system" for future users. To help you get acquainted with the system, a very simple guide has been created and is posted in Retzlaff Hall by the Media System and can be found on the Web site HERE . The Media committee members (Deb Robins, Roy Robins and Wade Prater) have also volunteered to go over it with any resident if needed. There should be no need for the equipment manuals.
